Winter love

I know it's early, but I love Christmas! Can you tell? The lights, the snow, winter activities, the cold, the need to cuddle, drinking hot chocolate while watching a good movie. Everything looks so clean and it's just beautiful!
I also like it because people dress more...appropriate? I love to be bundled up. During the summer, no matter what clothes you wear, if it's hot outside, you will get sweaty and feel gross. I hate sweat, the drips, how my hair itches, and the way it touches my back. You can't run away from the heat without having the ac on 63F. But winter is awesome like that, you can wear beautiful heavy clothes and be warm, cozy, and elegant! I love scarves, the sweaters, the turtle necks, boots, leg warmers, and off course, my curly hair can be tamed!
Last year, we drove to Oregon for Christmas, Brandon's home state. Can I just say how much I loved Portland? It's beautiful! The city is clean, very organized, no sales tax (hello, shopping) how we could see people in court from the big open window, the city is just amazing! Ok, I did see a lot of bums, like my sister in law warned me. But I can see myself living there, specially because of the weather. Rain all year long? I'll take a cup of that, please!
- 4 boneless skinless chicken breasts
- 1 large onion, chopped (I use Vidalia)
- 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
- 1 cup cheddar cheese
- 1 - 10.5 ounce can cream of chicken soup (regular or fat free)
- 1 -15 ounce can whole kernel corn, drained
- Place chicken in bottom of slow cooker. Scatter chopped onion over top. Spoon cream soup over top of that. Cover and cook on low 7-8 hours or on high 3-4 hours. A few minutes before serving, add in cooked rice, corn, and cheese. Stir to combine. Serve hot.
